Food Highlight: Radishes

Red, pink, purple, white – radishes come in a variety of colors, but all are fairly well known for their pungent, peppery flavor and generally make their appearance as salad toppings in American food culture.



Radishes contain amalyse, an enzyme that helps to break down carbohydrates, as well as fiber, minerals such as magnesium, calcium, folate and manganese. They also are a source of vitamin C, which is a water soluble vitamin that is not stored in the body and thus must be replenished daily.

I tweaked the feta-radish spread a little bit, instead of adding greek yogurt I used heavy cream and just added enough to make the mixture nice and spreadable then I tossed in some chicken. We rolled the feta-radish-chicken spread in wraps with lots of lettuce and had them for supper. Wow, were they good!

    1. I really enjoy a good salad with radishes. We didn't eat a lot of radishes when I was growing up but I like the added bite they bring to salads. I hope you like the feta spread!

  3. I've been using the radishes as a salad topping and snacking on them! I love how they have different flavors. The white ones are so spicy! I'm looking forward to making both the feta spread and the garlic scape pesto this weekend!

    1. I know, isn't the diversity of flavor so much fun? I think it's incredible all the various tastes found in edible plants! The Lord certainly is kind to give us such variety!

  4. I ended up making the radish butter, instead of the feta spread, and it was amazing! Made some homemade french bread to go with it.

  5. Oh, wow - homemade french bread sounds amazing! I love french bread. . .
    We really enjoyed the butter too, we added some paprika and a tiny bit of cayenne pepper.
